Nice.. and right in Time for seasonal cooking. The only thing I would change to the recipe is adding the salt before r SV 24:h00, to my experience, adding salt before SV cooking is taking out a fair aomunt of liquuid additionally from the product. But I guess it’s a personal choice.
Make sure your wild boar, or any game for that matter, had enough time to “hung” or rest in cooled environment at + 4° C. for 3-4 days before processing any further. It will reduce the strong game taste not everybody is in for to a nice flavor, corresponding perfectly to the Autumn season by adding some sweet chestnut purée with it.
Is there any way I could do this without Joule? I huge piece of boar just landed in my fridge and I would love to try this. *insert very disappointed comment about all the recipes on chsteps being for Joule which is still not available in EU and considering buying Anova after all this waiting*
I did this Wild Boar Recipe with a Wild Boar Rib Rack from D’Artagnan. Followed the suggested recipe, but cooked the rack at 145 for 8 hours and finished with another quick sear...IT WAS OUTSTANDING!

I thought i would give the boar 48 hours in the fridge with a shio koji marinade to tenderize…shio koji is magical
Sous vide Sticks are available at Media Markt;0) since a couple of years.
just get a food thermometer and set up the sous vide home technique and just keep the temperature around the same throughout the whole time
I found the ground mustard in this recipe to be overpowering. 50 grams is almost the entire 2 oz container of colemans. it made the sauce bitter and obliterated all other flavors. i wonder if that's a misprint. 5 grams seems more appropriate.

The 167 for 24 hours seems too high to get the roast as pictured--would seem to be the kind of cooking for pulled pork or ragout? I'd think 145 would be a much better temp to get a roast for carving?
