Why you always need to charge once, release all the gas, then charge 2 more??
When you charge and release the first canister, it basically clears the siphon of the "normal" air that was in it when you screwed the lid on. It doesn't carbonate anything, but it allows the next two cartridges to better and more efficiently carbonate the solution.
I'm wondering if you can omit the phosphoric acid? To me, part of the beauty of a home-crafted soda would be the ability to make it less detrimental to your health. I personally want to avoid it due to the known connection to calcium leaching.

For the strawberry juice you used the centrifuge. But can we not just cook, blend, add pectinase and filter that too?
