It's just the bone of the tail sticking out.
where can I buy that roasting tray
I used a good demi-glace and reduced port and still I thought this was bland and not really the "melt in your mouth/fall off the bones" texture I expected.. I also used the Joule silicon cover on a stock pot to minimize evaporation and was amazed to find only an inch of water in the pan after 24 hours.
There is a multi-colored garnish on top of the oxtails. What is it?
*looks* like roasted tomato, fried oregano + maybe fried parsley, pickled mustard seeds, finely shredded scallion tops, and perhaps finely sliced mini white cabbage, but can’t quite make out if that’s what the white stuff is.
Where is the polenta recipe? I did a search here and nada.
I made this some time ago and it was wonderful! I personally don’t like oxtails, but the loved ones I cook for do and the devoured them and asked for more. I froze the leftovers. This time we go with polenta.
