Go to the Recipe: Hot-to-Trot Tamales
I've never found a brand of lard that is just right. Any suggestions?
Would you be able to pressure steam the tamales for a quicker steam?
Fuck me, I think Moffitt's back!
Can I do in advance the tamales one day in advance and cook in the night of party

You had me a goat ghee. Thank you!
Have you considered making your own? It’s easy, but takes a little time — and is way better than store-bought. Rick Bayless has a recipe in one of his books. I couldn’t find it online, though. Check w/Google or YouTube.
I started ordering from Fannie & Flo. They have incredible Leaf lard at an amazing price.
All over my reddit feeds I keep seeing SV Wellingtons, and I'm like - can't wait to make Tamales tonight !
Certainly not the prettiest tamales ever made, but no complaints from any of the folks who had them.
Turned out great!
Yup - See https://www.hippressurecooking.com/hot-tamales-mexican-pressure-cooker-recipes/ or https://www.marthastewart.com/1531124/pressure-cooker-tamales.
Also a traditional dish in many parts of America, including the South (Delta tamales - a controversial version if you aren't from the region), and New Mexico.
Great post! Thanks for more inspiration. Can't wait to try
Anybody ever use parchment paper instead of corn husks? This old farm boy can't bring himself to pay 5 bucks for a bag of corn husks. I guess I could go out in the country and get some, but seems like work.
wheres the recipes for the sauces? Including the green one(puree) that the tamale is sitting on??
Perfect. Simply perfect.
Thanks!
Just made them for the second time this month. Amazing!
Only wish is that there was a recipe for that green mole sauce in the pic!
What is the Green Puree one?
When you say maseca tamal mix do you mean the tamal mix that you should normally only have to add water to or do you mean the normal maseca that you have to add the ingredients to? In Mexico they sell both types so some clarity as to which one to buy would be appreciated.
Until they say otherwise, I’m thinking guacamole?
