In the video for the cloud cake you add Xanthan but in the recipe you don’t have it. How many grams of Xanthan are in the recipe?

A premium recipe with a pre-made sauce starter. Why are you doing this Chefsteps? We want from-scratch recipes.
I got the CS premium membership to learn. Not to buy premade sauces.
Going to echo the same thing that other posters have said. I paid for the premium membership mainly for this recipes. It is an incredible let down that the sauce is not a recipe. It seems I paid to have access to buy a sauce.
I have learning and doing with ChefSteps for a long time now, this is definitely a low point.
The joule sauces are sub-par. Tried several of them-the recipes that you have are far superior.
I do wish they'd give the recipes to premium members. Every single sauce is out of stock.
I love my Joule and the Chefsteps recipes but became suspicious once they started selling sauces. Now they have sold the company to Breville. Buying the premium membership seems like a total waste of money.
truffle shmuffel that recipe for the cloud cake is O F F by a mile........... twice I weighted exactly to the gram and both times there is way too much liquid,.. its not coming from the standard no salt butter,.. its not coming from the same cream cheese you use,.. I am pretty sure there are 2 to many egg yolks and about the same for the whites... my base looks noting like yours after the the addition of 100g of yolks .... nothing... you know how much those damm vanilla beans are!!!??? WTF ! ok rant over,. I love every thing else.. pretty much.
OK I found the issue,... number one you guys dont have Xanthan in the actual recipe ??? why? I dont know!
second there seems to be a product on the market by King Arthurs flour co. that is no-bleached and non-enriched but still called Cake Flour! SOOOO would anyone from the Steps Brigade like to give the proper measurement for this friggin Xanthan gum that is the key ingredient in this entire product!!???? now that I have spent over $60 in 3 attempts with out and then a guessed 1/2 tsp of xanthin on ingredients alone.. wasting my time and money only to be found in the Video section... what a waste.. since you obviously know that this is wrong and have not changed it pisses me off.
Hi Aaron, thanks for flagging this for us, this activity seemed to have gotten left behind after we dropped our joule ready product line. It seems that the recipe is missing 1.5g of xanthan gum. We are going to take a look at this recipe and do an edit soon. Sorry that it has caused you some pain. Do you by chance have any images of your batter and final cake? That might also help us problem solve it.
