Seconding first comment - can you please specify how you get the potatoes to become wedges effectively?
Great recipe. I found changing the order around a little bit helped though. As part of step 5, do these 3 additional things 1. Cut raw potatoes into wedges. 2. Slice the shallots and soak them in milk. 3. Whilst you have your mandoline out for the shallots, slice the red onions for the salad as well.
Also, if you want to use your oven for the bacon, it will take about 20 minutes for crispy bacon. So as part of step 6, you should put your bacon in the oven (with the potatoes) but after the potatoes have been in for about 10 - 15 minutes. That way, your bacon will be ready at the same time as you have finished frying the potatoes and crispy shallots.
