When I did with a cheap bread knife, I could not get the ice to come out as square as in your photo. I used a torch to clean them up a bit into a more squared shape.

More science. I like that. The reason ice is cloudy is due to it being a combo of ice ( frozen water ) and entrapped air. The two are clear but have different refractive indices which leads to fog if you stack them up. When ice cracks the gaps are filed with air. And you have a problem. Unless it cracks in a vacuum.
I freeze cubes at less than 20 microns atmospheric pressure. You need a lab pump to get there. A foodsaver won't do it. But a Foodsaver vac canister will handle that low pressure without imploding. So I fitted an Edwards pump with a Foodsaver connector and voila! Put the water in whatever shaped vessel you like. Put that in the canister. Bring it down to under 20 then freeze. Glass. No need to cut or take it out to the garage to the band-saw. Great for pool parties. People actually notice it.
