Stella Parks (aka Bravetart) has gf options for almost all of her recipes in her book. She advises replacing AP with 4oz white rice flour, 4oz oat flour, and 4oz teff flour.

My favorite is a recipe from Gale Gand that includes malted milk powder - chewy and melt-in-your-mouthy.

Hi Sofie, All that matters in an oven is controlled and stable heat distribution. Generally the more air control (convection) the better—not to be confused with more air flow. And the smaller the oven, the better heat distribution. There is a reason we cooked the CS chocolate soufflés in a $200 oven rather than our larger high end range ovens years ago. What would you like to know about the V.2 version of Grant’s chocolate chip cookie ?

Thomas Keller chocolate chip cookie recipe? That has been a go to in my household...
None of the cookies described is thin, crisp throughout, and made with dark chocolate chips, which is my idea of perfect. The recipe on the Nestlé chocolate chip bag is my favorite, but made with butter (so the cookies melt to thinness), Ghirardelli chips (superior!), and baked to crisp doneness (not taken out of the oven with half-cooked centers. YUM!!!
I find that cookie repulsive and every time I walk by the W. 74 St location and see the line I’m mystified and believe it got on the “tourist list” which accounts for the line especially as they opened a newer, larger shop just a few blocks North on Amsterdam Ave. which never seems to be crowded. If an undercooked, cloyingly sweet cookie is your thing then this is your cookie ! Jacque Torres is just around the corner from Levain if you want a good choc. chip cookie.
My favorite chocolate chip cookie is from Carole’s out of Chicago. I have been searching forever to find a recipe that compares to hers. They are the absolute best. I keep experimenting to get it right ratios to no avail. Please help me to find this recipe! These can be purchased directly from Carol’s cookies or I used to purchase them from Whole Foods markets. You will not be disappointed.
