Go to the Article: How Infusion Works
I infused grand marnier with clementines. However, half the clementine were smashed when I strained the liquid. How can I avoid this, or is it that I need to use different fruits? What fruits and vegetables would you suggest I use other than the ones mentioned in the video?
Love your shout out to Durian!
Down here, in the South, the favorite Watermelon infusion is Vodka! Looking forward to trying some others!!
I tried the following: watermelon infused with lemon lime & bitters, and pineapple infused with pineapple juice. I used an el cheapo vacuum chamber (cheap for chamber vacuum USD$650), so maybe results are not the best. I used "Apuro Chamber Vacuum Packing Machine"The watermelon was excellent, the kids loved it. However I did get a bit of liquid left in the bag - however it tasted great - watermelon infused with lemon lime & bitters had excellent texture AND got the byproduct of lemon lime & bitters infused with watermelon juice, which tasted really great. The pineapple however the texture got very dense and hard to bite...not sure this was limitation of my device, or the pineapple I used, as the original pineapple was already a bit tough to bite into. The flavor was greatly enhanced but texture was not as good. I didn't have vodka on hand to try, but next time...
