Can this dough be made ahead of time and frozen? If so, do I need to give the dough the initial overnight rest in the refrigerator before freezing?
You can freeze right away. Freeze away Amber, and make sure it is wrapped or packaged well.
Do you blind bake if you are topping the pie with a second dough?
I am in my eighties and have made pie FOREVER but this recipe has been the easiest to roll out because I did follow all the details in videos. It is resting in fridge and I will bake it tonight. I've never baked a pumpkin pie shell first but am imagining this will solve the gummy problems! Thank you so much and yes, the videos all need your wonderful explanations to really set the info into our brains. And it is not totally clear if Matthew is using the flour/salt/sugar from the bowl to add to the butter process but I did and it worked well (haven't tasted it yet though).

Hello Ashley. I won't not blind bake if topping with a second dough. I recommend following the process Chef Matthew did in this RECIPE if topping with a second dough.
