Air can’t evaporate. I feel like the quality of the writing has really gone downhill. There are quite a few other errors as well in this piece. I don’t think the author has a firm grasp on the science of cooking and baking. Why was it assigned to him? This isn’t the quality I’d expect from ChefSteps at all.
I’m not sure where are you got the idea of evaporating air. I don’t see that anywhere.

I agree..the quality of some of the writing around here sucks. Take for example a comment that makes an allegation that is not supported in the article and then rags at the author.
Some people just like to be trolls... they can't help themselves from being petty... *shrug*
