What do you mean by air frying not being "healthier" than frying with oil? You eliminate a lot of fat and thereby calories by air frying root vegetables instead of frying them in oil. That adds up for someone trying to limit their caloric load. Plus, the vegetable oil most people use during frying is most likely really bad for you when it's heated to frying temperatures.
In general air frying is used to make normally fried foods at home without a fryer. In this case the majority of those foods that you would buy prepackaged at the store have actually already been pre-fried in oil, the oil that remains in the food is what super heats in the air fryer and reproduces the frying effect. Those are the products that are not necessarily healthier when air fried. But that changes when it is a food that you yourself are prepping and making at home and can control the amounts of fats added to the foods. We will add clarification to the page.

What about bacon - would it be good to use the air fry setting for this? (Obviously it would require a pan underneath to catch the dripping grease.)
Even with a pan underneath you will get a lot of oil splatter in your oven. The method used in most professional kitchens is to put the bacon on a baking tray with parchment paper below and on top of the bacon, with another flat baking tray on top. This will keep the bacon flat and cooking evenly plus keeps any grease from getting in your oven.

Is there a difference between “Air Frying” and the Convection setting? Or is it just marketing?
Mostly just marketing, however the mesh baskets really help. You need that airflow.

It's not just marketing. I used to be a skeptic until I actually got my hands on an air fryer. YES, the mechanics of the Air Fry setting is fan speed, as Julian noted... but it's important to understand that this fan speed has a profound effect on how the food actually cooks. By moving the air over the food faster, you're dramatically increasing how quickly heat is convecting into the food. That translates into faster cooking time. But in the same way that turning up a burner to high speeds up the cooking time of food in a saute pan. The outside of the food is being heated rapidly by convection, and the heat from the outer layers of the food then transfers to the inside of the food via conduction.
A nice hot sear in a super hot pan will not give you the same results as a slower cook in a medium-hot pan. Likewise, Air Fryers are not just quicker ovens.
I have a basket style air fryer, and my wall oven is a convection oven, specifically a GE Profile. Besides size and preheating time, is there a difference between my wall oven and a countertop air frying oven? I would like to get a Joule air fryer, but I have to be able to justify the increased use of counter-space to my wife. Unlike the basket style air fryer, I would assume that due to size and weight, the counter style Joule air fryer becomes a semi-permanent resident on the counter.
The two biggest differences are going to be the air speed, it is a very high convection compared to your GE. Second is a little less important but since it is a lot smaller it heats up much faster.
We almost stopped using our oven when we got a Breville about ten years ago and updated to the air fry model this year. Note, we are cooking for only two people. Plus, when we cook something stinky (cabbage, cauliflower, fish...), we'll lug the Breville into the garage to keep our home from stinking for hours after cooking. I wouldn't be surprised if you stopped using your basket air fryer all together. The counter top oven is just so much more versatile. We even cook whole chickens in it. I can add a second tray under the chicken to cook veg in the chicken drippings. I'm guessing you can't do that with your basket air fryer. No, I don't work for Breville
