Nutritional values should stay the same when using lower temperatures. You are just removing water from the food you dehydrate. Now what you can disturb at higher temperatures above 118°f are the enzymes. This is when the food is wet and that temperature measure is for the food and not the air temperature. Once the food is dried then it can withstand higher temperatures before the enzymes are deactivated.
