In Australia, Fan Forced (aka Convection) standard oven cooking has been the domestic norm for decades and we traditionally adjust all non FF baking recipes temperatures (for International or our grandma/old cookbook ones) down by 10°C. However this article states it’s only a 4°C difference???

You’re misinterpreting the 25F difference. 25F is about -4C, but that’s an absolute conversion. 0F is about -18C, so works out that a 25F change is about a 14C change. That’s in line with your 10C rule of thumb.

Seems like "sciencing" the simple into the complex is all the rage around here. Convection ovens are not hotter at 400F than a regular oven at 400F they just distribute the heat more efficiently. So you can lower the heat or decrease the time if you use a circulating oven to pair it with a non-circulating one or you could come to the conclusion that you're cooking not hybridizing an enzyme and just use the old temp / times in the new oven. Most home ovens including the convection ones are all over the place when in use. Set it to 400 and you get 350 to 430 or more and average 400. In the case of a PID oven you get precision but how much difference does a 400 vs a 425 temp roast make?
Science..love it. There is only one heat. It can be moved around several ways though.
