Did you try fermenting in sous vide bags instead of jars? I have very good results with fermenting chilies like that. After a couple of days you have to daily make a small hole and reseal to "burp" it but it's super clean and everything stays nicely under the liquid

After 11 days fermenting I opened the bag. no burping at all but I did leave some head space (I buy bags in rolls then cut to size).
It's actually way less hands-on and care involved. Mix up veg, seasoning, salt, vac it. Leave it alone. No worry about air or keeping stuff submerged.
