I made this yesterday and froze an icecube size. defrosted it in the fridge this morning and it seems perfectly goopy and not split though the top surface had dried out a smidge and needed to be stirred in.
I made the sauce using recommended quantities and sous vide 4 chicken breasts in it but it’s silly making such a small quantity of sauce for the effort. It’s like a quarter onion and half a carrot and - Just go ahead and quadruple the recipe and freeze 3 batches of sauce first time in 3 years that I’ve successfully conned my boyfriend into eating vegetables haha. I added extra salt halfway through so mine was a touch salty but that’s how we like it and I think some of the salt goes into the chicken while cooking.
actually I also used salted butter so ... but it did taste less salty after cooking the chicken in it (diluted?). Was very nice even with seasoning blunder - would definitely recommend
I made this yesterday, and with the sous vide chicken breast, it was extremely delicious. I too am hoping it freezes well; I put the remainder in a sous vide bag ready to add protein, seal and set cooking immediately. If that works out, it'll be incredibly convenient!
I started out making the recipe just as, but as it was simmering I noticed the liquid had cooked out quite a bit (even with my pot covered), so I added more stock. I still only ended up with 250g, instead of 400. I’m hoping it’s still enough to cook 4 breasts. It smelled and tasted delicious. Agreed with a comment below that you should just double or quadruple the recipe, it’s hard to work with such small quantities of everything!
I agree, make more. The recipe uses like 1/8th of a squash, 1 carrot etc. So make it up. For some reason I was out of potato starch, so I subbed corn starch, not sure if that made it too think, but it seemed to work fine.
10g is WAY TOO MUCH salt...... overpowered the sauce. I'd use about half the amount suggested and add to it, if need be.
It is meant to be over salty. It seasons what you cook in it.
