Concerning "creamy koji". Are you referring to Shio Koji? Just plain koji pureed with water? Just looking for a bit of clarification. Thanks.
creamy koji is its own product. we use the one from cold mountain.
I found the product that they use. It DOES look like shio koji to me (they even call it shio koji on the product description).

Super complex. Sure, nice and thick for sous vide cooking, but also a great consistency for over noodles for the Best home cooked Sesame Noodles. Also can see this work as a satay dipping sauce.
Made exactly as indicated in recipe (doubled it - I love this easy ability to scale recipes and weigh ingredients!) but it was WAY too salty, in my opinion. Also, I can't find the "visual test of doneness" feature anywhere on the app - so this advice was not helpful at all! I had to look up a different chicken thigh recipe to get a sense of how much time to give it! Argh. Does anyone else know where this "visual test of doneness" thing IS??

I ordered Koji from Amazon. I'm from Texas and the day it delivered it was really hot outside, the mailman left the package on the porch and the Koji was pretty hot. Do you think it's safe to eat or should I toss it?
What does the creamy koji taste like? I definitely cannot find it here. Should I use a substitute or just leave it out of the recipe? Thanks!
Can you change the recipe to be focused on volume rather than weight? It's hard to figure out how many oz or grams I need if I don't have a kitchen scale.
