Is the Nama Shio Koji - Rice-Malt Seasoning, 7.05oz, that you link in the recipe from Amazon.com the same ingredient as Cold Mountain Rice Malt Koji, also listed on Amazon? Can the Cold Mountain product be substituted for the Nama Shio Koji? Thanks
Hello David, the Cold Mountain product is not the same as the Nama Shio. Although it is what they start with to make the shio koji by combing it with water and salt.
Made the cabbage as instructed. I went for 10 minutes at 550°F in my oven. Should have gone a little longer, but really enjoyed it. For the dressing I used dijon, bacon fat, jalapeno vinegar, and a little oil. Will definitely be using this method again!
Confused. It says "Put half of the cabbage wedges onto the broiling rack in the roasting pan. Space the wedges out evenly." This implies you put the cabbage directly on the broiling rack? So what do you do with the roasting pan" Please clarify! Looking forward to doing this tomorrow.

Are there other names for creamy koji? Based on the question below, it seems like it’s not the same as shio koji, or? What wouls the japanese name be? I don’t live in the USA so I assume the specific brand you recommend is not available here.
Creamy koji is shio koji in a sauce or blended form. Shio koji can come in many forms. You can use white miso thinned with some water as a substitute.
