I prefer Osaka-style (and that's what I make when I cook this at home), but pretty much all okonomiyaki is a good thing.

In Osaka-style okonomiyaki the ingredients are all mixed together in the batter, with only a few items (like strips of pork belly) laid on the surface to finish cookuing. In Hiroshima-style, the ingredients are all layered on top of the base 'pancake', which usually makes the finished product quite a bit thicker even tho they sort of smoosh the thing down as it cooks. Hiroshima-style also tends to include noodles and a sh|t ton more cabbage than Osaka-style. Both versions get finished with okonomiyaki sauce and dried seaweed powder (aonori) and bonito flakes (katsuobushi) which sort of dance from the heat of the pancake. But - and I'm not 100% certain on this - I think the finishing touch of kewpie mayonnaise is sort of emblematic of Osaka.
Fwiw, this is the last time I made okonomiyaki, complete with my black and gold chopsticks reflecting my Pittsburgh pride.
If you ever make the stuff at home, be prepared for the somewhat surprising texture of the grated nagaimo yam. It's....... well......... evocative.

First time I was in Tokyo my work friends took me to the Meiji shrine (on what was actually the Emperor Meiji's birthday) and one of the food stalls was selling Hiroshima-style okonomiyaki and takoyaki (grilled octopus balls with a similar batter).
At the end of the week, one of the department heads in my group had heard that I could cook okonomiyaki, so he organized a big farewell lunch. We walked like 10 blocks (mostly underground, using subway connector tunnels) to his favorite okonomiyaki place and we had like five or six pancakes. Including an 'Italian' version. Don't ever get the Italian version.
