Hi friends I’ve been making your recipes for over 7 years now and I truly love you all. I even won the steak knives that Grant made a few years ago and use them all the time! I’d love to use them to spread butter on a few slices of 100% whole wheat sandwich bread. I can never find a good reliable recipe. I understand whole wheat is tricky but I know if anyone can conquer this loaf and make it approach for a truly terrible bread maker like me it’s you guys. During this time of ‘distancing’ I have made a promise to myself to make all of the bread products for my family and this is a huge missing piece. Please help!

Are there any plans to do old school sourdough with a starter?
I am just about to make my first loaf of sour dough with a home made starter and would love to see you guys do something like that , big project for me but like us all doing our part staying home for the good of us all I have a little time on my hands , love you guys and love my Joule !

Hi, you can use this recipe posted by simons_bread.
Baker's percentage.
Whole wheat - 100%
WW levain - 20% (fresh yeast 3%)*I used fresh yeast since I didn't have a WW levain
Seed soaker - 60%(*use 20%seeds and soak in hot water for about 15mins or can be soaked overnight, once drained the weight is equivalent to 60%)
Honey - 5%
Salt - 3%
Water ~70%( *use 60%, and add more if necessary)
Oil - 10%
*Would suggest using a paddle attachment of the machine, for a uniform kneading.
* The dough is slack, so use a mould while baking.
* freeze the baked bread, before slicing.
(*) modification done while making the recipe.
Now how about a section on gluten-free baked good? I would love to see that!
