What about the Tare?
I think the point of this recipe is to not complicate it. It's such a simple and quick recipe that will probably give good results, just not expected to be up to par with (great) ramen shops.

Joined studio pass to get this recipe, hopefully will make it soon - I'm just waiting for my log-grown Shitake's to be ready for harvesting (2 weeks)
For those cooking the broth with an Instant Pot, the total time to come up to pressure and release is probably more like 30-40 minutes, so I might recommend starting the broth first, THEN the noodles. I released the pressure manually. Letting it naturally release would probably take much longer- I'm guessing well longer than an hour for total cook time.

Finally I've managed to collect all components and tried it. Not sure what's I've done wrong but this broth is not eatable and far away from the real umami broth. I was left alone at my lunch time when my family tried it. Only I could taske is strong ginger taste and soy sauce...The eggs were OK...but the rest went to organic waste....
you need the white miso paste, that they put on top at the end. i would agree the broth isnt much without it.
