Go to the Recipe: Carbonated Byrrhgroni
Fantastic cocktail! Being a huge Negroni fan, and various versions specific to various bars, this is a great addition. The only issue to me, being a restaurant & bar owner, is the yield to pour cost % with the addition of two cartridges per two drinks. I guess it depends on price point in your establishment, as opposed to constructing for party consumption. Certainly won't stop me from making them though, they're great.
@Mark It's 2 cartridges for a quart siphon but you're probably good to do two drinks easily in a 0.5 quart siphon and just use one charge. The only way to know is to test it. Cheers!
I've tried this technique to carbonate various cocktails, and I haven't been able to discern what makes a drink more or less likely to carbonate well. Does anyone know whether it's related to the alcohol %, or do certain compounds have that issue?
Fun fact of the day, there is a Byrrh advertisement painted on the building to the right of the "Le Gamaar" theater in the movie Inglorious Bastards. Who has Byrrh anyway? Oh yeah, I do and all the rest of the ingredients and devices for this unique cocktail. I think I shall...
It seems like the CO2 adds a salinity to the drink. Anyone else pick up on that?
A delicious cocktail that really makes you hungry for dinner! I served small ~75 mL mini cocktails in aperitif glasses.
Made a 400 mL batch a few hours beforehand and just put the 0.5L iSi Whip in the fridge to cool, so no ice needed. However, my attempt to carbonate it with 2 cartridges failed. I think I have a valve leak!
if i wanted to milk wash this, do i need to add citrus and what would be the ratio of drink to milk for the wash? thanks
