Depending on the Vac unit, you can just flip he power switch to "off" instead of pulling the plug. As a warning to those using a VP112 (or similar) inside the chamber can get VERY sticky from the sugar after you pull the vaccum and it's a bit of work to clean and in my case I ended up replacing the bag clip :-). I learned that after I did Grant's prune coals from Modernist Cuisine. So just a heads up. And yes I'll probably try this recipe and get out my vinegar and water. LOL
Can you clarify Todd? Is this because of spattering from the bubbles as the vacuum is pulled? Maybe one could drape plastic wrap over it with holes in it to catch the spatter?
I'm going to try this in my VP215. I'll pull the sealer bar out and line the whole chamber in plastic wrap as part of my mise, and see how much gets deposited. Probably have to use a little veg oil on the lid to get the wrap to stick there.
woah! so I have VP112S and only way to pause is to pull the plug. Due to vacuum, this will make a mess inside ? hmm...may not be worth it then. Or would that only happen if we pull the vacuum for too long (i guess finding the sweet spot requires some trial and error) ? Thanks for the heads up....now I might just wait...
If we don't have a silpat, can we use a non-stick baking pan (w/ parchment paper) ?
Can the same/similar results be achieved with a whipping siphon?
I would not recommend that. It will cool too fast to try to discharge from the canister, also not sure the plastic components will hold up to that high heat.
If you spray it with oil first it will be ok.
No parchment paper, Just on oiled metal if you do not have silicone.

Palm shortening, Coconut oil, or a vegan butter substitute like earth balance. But we didn't test any of them so that is just a guess.

I have a VP215. I wonder whether reducing the vacuum time AND placing the still warm "brittle" in a vacuum bag AND removing seal bar would still "aerate" the brittle, but prevent any splatter. I haven't tried this recipe yet, so would appreciate feedback.

I added 1 teaspoon of coarse Kosher salt with the nuts (cashews) and sprinkled a little on top while it was still warm.
Would appreciate feedback on this. I made the brittle yesterday and it is delicious and turned out fairly puffy. However, it did deflate half way during the 20 min that it sat in the chamber vac. FYI: I did about a 38 second pull which did make it nice and fluffy at first with no splattering. I love the recipe and want to perfect it so will take any advice on getting puffier result.
