I am in a new role for an expanding hotel group.
Part of the role involves supporting chefs with new menus in all aspects of menu engineering (dish development etc). I understand this part of the role.
The other side of the role is about developing chefs and creating consistency in terms of cleaning and of the food served to customers.
As I understand it this involves analysing what currently happens and developing solutions to problems then training staff and monitoring what happens after.
What I am looking for are systems/tools/resources/templates to help me with this side of things. Is there anyone else out there doing this sort of thing?
