These are lovely! With the states of water diagram - it would be nice if you included a thermodynamic "vapour dome" one to accompany. The dome is just a line that looks a bit like a bell curve but it drives home the fact that temperature stays constant while a substance is boiling and, more interestingly, if something has multiple parts. So your sauce with wine in will stay at say 70*C <can't remember exact T> until all the booze has cooked of, then steadily rise to 100*C till the water boils and then once all water has evaporated (maybe you're like wet-caramelising sugar) it will steadily go up again (oh sh*t I looked away for a second and suddenly the sugar burnt). Monitoring the Temp is one of the tricks for distilling booze - you toss away the first stuff and once the temp moves you stop collecting so you don't get all the hangover inducing gunk in there that boils at a different temp.
