It is unclear if we have to use all the umami ingredients or pick one. The sentence at the end makes me believe we only pick one Umami agent ("Pick the ingredient you want to use, weigh out the quantity you need, then stir it into your gravy. Taste and adjust the seasoning, if necessary."). Is that correct? If yes, how would you rank them from best to least best?
Hi Michael, you pick one and scale from there. And I wouldn't say there is a best option, we did this so you can use one of the ingredients on hand at home and get very similar results for each one. These percentages will be very light if any flavor imparted from your choice but will increase the overall umami. But for me I would go straight for the msg.
