I like this idea of cooking a omelet, but you just cost me $150 on a cool new pan, lol
Would like to see more uses of the Control Freak. Paid alot for that item and need to see more ways to get the best uses from it. I currently use mine for alot of things, and omelets are one thing it does incredibly well. Thanks about tips for corn starch, blending, and letting egg mixture come to room temperature.

I'm on my fourth attempt to find a decent non-stick pan that works really well on an induction cooktop. I've had some (Zwillig) that have terrible heat conductivity, take forever to heat up, others (Misen --- I'd rate it at 0 if if I could find a place to rate it), that have only minimal ferrous material). The one in the video looks to me to be the Hexclad hybrid. Pricey, but I'd hate to get one and be disappointed again. Let me know....
Hex-clad are legit. Scanpans and Green Pans are very good too.
The really isn't a new technique (it used to be called a dressed omelette ) and for the years it's been around everyone has had your problem. The pan either sticks and the eggs rip or it so slippery the entire omelette spins in it and no swirl is made. If you're using a new nonstick of just about any make it's probably not the pan. It's just a bitch of thing to get right. Some of the Asian guys swear by the cornstarch but the masters of this technique on the streets of Korea don't use it and get perfect results.
It's all about timing and heat. You'll have to vary those in your kitchen and successively approximate to perfect by failing upward. There is no technological solution to it but anyone can do it.

Hexclad is the bomb! If I were rich, I would give the fry pan sets as gifts. You will never buy any other fry pans. They don’t chip like ceramic, they never loose their non stick, your not putting aluminum or any other toxic crap in your body from cooking with them, and they Sear like cast iron. Your best pricing will come from purchasing from Costco if Hexclad does a demonstration at your Costco, check the Costco website for their schedule. I’m been writing Hexclad to make sheet pans which would rock my world, ….especially when cooking bacon in the oven which would make clean up SO much easier. No, I am not affiliated with them! Try one, you won’t be disappointed. Get on their email list as they run specials. Sets are cheaper, 8”, 10”,12”.
I found out about the tornado egg a while ago. I’ve seen many different versions of egg omelettes in the night markets. I found a pan that seems to work perfect. I also found that higher heat and fast is better, like you see them do in the videos in the restaurants. My tornado omelette is literally done within 30 seconds to a minute. I still haven’t totally perfected it but it seems like every other tornado omelette is pretty good. I sometimes will have a tomato base or just use tomato sauce or make up a mixture of tomato sauce, with soy or Worcestershire sauce. I’ll make a sauce with some cherry tomatoes that taste really good. And they are over rice. A vid on technique coming.
