I’m guessing the same technique/recipe could be used to make fruit chocolate. Similar to the ones sold by companies like Valrhona. If one subs freeze dried fruit powder for the milk powder ?
I think with those items you would only want to sub a portion of the milk solids with the fruit, but coconut creamer substitute works great too.

Could you use vanilla bean paste ?
For the diabetics or low carbers out there I have seen heavy cream powder substituted for the milk powder and (powdered) alllose substituted for the sugar.
Would this yield acceptable results?
It is not something we have tested, but it should be worth a try.
Im planning on trying this and a complicating thought popped into my head. Can I caramelize this during the construction? I’m guessing that would involve toasting or caramelng the sugar? Before? Maybe? Terrible idea? Probably?
