I would recommend just adding the spice blend to what ever blend of ground meat you use for burgers. We did not test the rest of the additions like the gelatin with any other meat besides beef.
Grant's life clearly sucks.
Another way to smash is to use a sprizer bottle to spray the spatula before you smash and then twist it off. (Kenji trick, I forget?)

I would recommend no longer than a day ahead, you will start to really affect the texture of the ground beef, and dry it out slightly.
