Definitely want to see the progression of this. Currently my favorite burger buns are King's Hawaiian; I like the rich flavor of brioche, but the buns I've had tend to be to poofy, which makes the bite really difficult. In my (limited) experience they also have not been able to hold up and stay intact through the duration of the burger eating experience.
Now we're talking! I love Keller's buns, can't wait to see how this progresses!
Would love to see you develop a texture similar to soft clouds.
Hi Benjamin,Nice post! I actually was in your situation (crumbling brioche) 7 months ago. Now working on version 9.2. Very happy with the result and became third in the Dutch burger final last week. If you want I can share my recipe?
I would definitely be curious to take a look at it. I think we have come up a pretty solid bun. You'll see as the development project progresses we corrected the problem pretty quickly. I think the bun we came up with is nice, very tender and flavorful as well as being easily repeatable at home. I would be interested in seeing your recipe for sure.
