Hi, does this receipt also work with deep frying? How to adapt temperatures from the French fries. recipe considering the use of sweet potatoes?
Good question. I would almost omit the first cooking stage and go right to the deep fryer after dredging. Since when deep frying the starches are hydrated while submerged in oil. But they could become too dark this way.....and par cooking may or may not improve the eating texture and experience. You will still want to fry at temps around 350°F.
Can I pre cook in a steam oven? If so what percentage steam and leave them uncovered?
Probably should specify the dimensions of the individual fries once cut.
I cut mine the way the instructions seem to imply, but even after 20 minutes in the convection oven their interiors never softened. There's no way these would get done in 10 minutes.
Frustrating.
