While watching the video it reminded me of something I used to make back in the sixties for my kids. Cut a slit/pocket into a hot dog, stuffed it with Velveeta, wrapped it in bacon, and threw it in the oven. I haven't made them in about a year. I still love those and can't wait to try these potato wedges!
I think that would be fine, just wait on putting any cheese on them until you are ready to serve.
Could I make them ahead of time and recrisp them before serving? Having 10 for dinner and need to prep.

Made these last night, and they were absolutely fantastic! Crisp bacon, with just a little bit of chew, perfectly flavored and cooked potatoes, they came together incredibly easy - seriously couldn't ask for more. Your videos do such a great job of walking us laymen through the process! Thanks for all that you do!
