Baking powder is correct. It desiccates the surface and creates little pockets of air, resulting in a crunchy, crisp surface.
Im also pretty sure its suppose to be baking soda. Sins baking powder wont actually change the pH. It contains aicid that will neutralise it and carbon dioxide gas?
