Hi I have tried this recipe but I am not getting the crispy on the cauliflower, any ideas on why?
I agree with Javier, have the oven, made it today and not even close to crispy nor crisp. Tender yes, but needs more work to make it worthwhile to make again
I made these following the same dehydrate then air fry process, except I didn't get out the scale for the batter and didn't care about keeping it vegan. I just did 1:1 milk:flour by volume, and used butter for the fat. They're quite crispy and addictive. Will be doing this again
I used my Ninja Foodi oven with the same time and temps recommended here. I don't have the fancy Breville oven (yet)

Can I sub Gluten free flour or cornstarch instead of AP flour? Thanks!
Chickpea and Mochiko flours are going to be your best subs. I would gravitate away from using pure starch here.
Convection, Super Convection or none in the smart oven during the two phases of air frying?
Super Convection is the default for air frying. I’d always go with that. It’s not air frying at all if there’s no convection.
This was tasty but not even close to crispy. Next time I will try dehydrating longer and do the main cook longer and possibly slightly hotter.
