Would you recommend toasting and cooling the nuts before adding them or is a waste of time?
Raw nuts release their oils during baking and the macadamia flavor really comes through, so toasting is completely optional.
If you want to lightly toast the nuts before adding them to your cookie dough, we suggest placing them on a baking pan and toasting them in a moderate oven for 8 to 10 minutes. Watch them closely and give them a shake now and then. They can go from golden to scorched in a quick minute. If you purchased roasted nuts, you do not need to toast them again.

Could we use a food processor to mix the dough? I don't own a stand mixer

You can. Pulse mode. Hand mixing is better with a wooden spoon.
I will always recommend unbleached flour and that is what we use in the studio. The less refined the better.
