Yes, Pascha makes the best tasting chocolate and you can find other brands that are plant based. It's about the equipment it is processed on and the process of the sugar refinement. Most producers make milk chocolate in the same machines. Cane sugar can be bleached with bones.
Of course you can use any brand of dark chocolate if you are not concerned with splitting hairs.
Can I use regular AP flour in replacement of the almond flour ?
Worth a shot. It will need some minor adjustments, and my guess is that less flour will be needed at around 150-200 g. You will find out once you bake one off as a tester and adjust flour from there.
What type of chocolate chip is this designed for (cacao %)?
That is a matter of preference and over 60% is always a great choice.
