If you're using a Control Freak, given its precision control, do you still need to use a bain marie? Or could you just set the Control Freak to slow intensity and the desired temperature? That would seem to be easier. And if so, to what temperature would you advise setting the Control Freak?
Was cool to see Otto after so many years and seeing him in heston's old videos (no iron in this case LOL). Same philosophies from that time range. Have done this technique many times like this bc of those videos. Great to see you Otto and look forward to seeing more of your contributions!!
I have been doing this recipe for years. Great to see Otto added to the team! Has anyone found a good non-stick bowl that works with this technique but is easy to clean?
Otto-- I like the mixing bowl you put the eggs into and over the simmering water. I want one. What is it and where did you get it?
