How long is the compound butter good for? I see that it makes quite a bit and it'll just be two steaks I'll be doing. And more importantly anything that it would go well with other than steak?

Yes, but you will need to take it out of the fridge a few hours before you want to use it so it can temper, and maybe give it another whisk.

So to be clear.. If I want to make the compound chocolate butter ahead of time, I can do so whipping it up ahead of time? And then by putting it in the refrigerator? Overnight? I then take it out a couple of hours ahead of time? Whip it up a little bit and form the quenelles then? Can I make the quenelles/rocher ahead of time as well, To avoid a last-minute rush in the kitchen?
