Can I use corn starch rather than potato starch here?
Rice starch would be a better replacement.
Can you extrude the noodles through a press?
They are very tender to work with. It may be difficult. Let us know if you give it a whirl.
Would sweet potatoes work the same?
I've been a member almost since you guys started. I absolutely love your perspective on cooking and it's such a great supplement to my lifelong hobby of cooking (especially since I left the commercial kitchen). Unfortunately, I recently found out I have celiac disease--which is frankly pretty heartbreaking for the role food has played in my life. But, I want to say thank you for still developing what are surely unpopular Gluten Free recipes. As "Modernist Bread" says in their section on it: it's a problem uniquely solvable by modernist cooking. I have been trying my hand at solutions to supposedly unsolvable problems without using gluten. My successes are limited, but it is a way to take a sad thing and try to make it a project. Anyways, I wanted you to know that while they probably aren't your most popular recipes, I bet no other type of recipe is more deeply appreciated by anyone than a GF recipe is by me.
Was awesome with Chasu pork and shichimi togarashi. Noodles have a very pleasant bouncy texture
Just came from making the recipe and wanted to note that the potatoes in the ingredient being listed as peeled and cooked threw me for a loop, as it took me a moment to realise that the potatoes were cooked in the steaming step rather than having to be precooked. No big waste (just have 2 boiled potatoes hanging out in my fridge), but might be worth rewording that.
I found the portion size on the small side for a main dish, will scale it up by 50% per portion for each person.
Anyway, the final noodles tasted great!
I've been wondering how to scale up this recipe for 10, as my steamer doesn't give me a lot of room to steam everything in one go. I might use some hotel pans with a steam rack in them, but was wondering if you guys have any other ideas?
