This sauce is amazing! It is literally good on anything! I reduced the sambal by 40%, swapped chili oil for olive oil and left out the garlic chives. It was amazing on skirt steaks!
Is balsamic a decent replacement for the sweetened vinegar?
Saba vinegar is probably a better substitute for the sweetened vinegar. Balsamic has a particular flavor that is inconsistent to the other ingredients.
wouldn't just blending vinegars, ginger and garlic first then add the rest make the process simpler? or is there any particular reason why ginger & garlic have to be "grated"?

I know this is oil based etc., but for how long will this last (in the odd chance we don't eat it in three days)?
This will keep for about two weeks when everything is submerged in oil. The herbs will start to oxidize and would keep longer if omitted.
