Thanks for this recipe. Two questions: (1) what exactly is "sweet spice"? There's a link to the wiki, but no description; (2) the temps for holding the yolks (149) and the whites (167) for service in the water bath are different - for those of us with just one bath who would like to be able to keep both products warm, what would be the best temp to hold both items in the same bath?
Sweet spice is a mixture of various warm spices that @Grant made and goes lovely with variety of dishes. Here is the link to the recipe. http://www.chefsteps.com/activ... As for holding at one temp, go with 149. If you hold the yolk at the higher temperature they will continue to cook and become much too thick.

Absolutely you can hold them refrigerated for up to 1 week if they remain sealed.
Can you possibly use a Smoking Gun instead of the liquid smoke?
