Looks wonderful but my diabetes says NO! They say sucralose can substitute 1:1 by volume (spoon for spoon). In this recipe, can the sucralose substitute by weight?

Sucralose, a popular artificial sweetener, is much sweeter than sugar, so it cannot be substituted in a 1:1 ratio in recipes. Sucralose is about 600 times sweeter than sugar, so significantly less is needed. For example, if a recipe calls for 1 cup of sugar, you would use much less sucralose.
That said, the actual amount depends on the form of sucralose you’re using. Products like Splenda, which contain sucralose, are often formulated to be measured in a 1:1 ratio to sugar. However, plain sucralose (in pure form) is far too concentrated for that kind of substitution.
When baking, the texture and volume sugar provides can be affected if replaced by sucralose, so you may need to make additional adjustments to the recipe .
