Please (pretty please?) add the temperature settings for The Control Freak in your recipes. It's a bummer to have bought that, in large part due to your use of it, but then to get no temperature guidance in recipes. I can understand not having that info for older recipes...but it seems easy to incorporate into new ones.
I realize that few people have The Control Freak, but it seems like you could easily provide general info (e.g., medium high) but add specific temperatures for those who have The Control Freak, much like you do with the Smart Oven Air.
Thanks otherwise for all of your great work!
This was easy, delicious, and not really like any other sauce (except maybe queso).
It really brightened up my carnitas tacos.
I don't have a Control Freak but but I would still find this information beneficial.
This is sooooo good. I used some yellow heirloom tomatoes to really emphasize the bright yellow color. Highly recommended.
love this recipe. it is a great base for so many different sauces. I've done a smoked tomato version with ancho, one with chipotles, and one with smoked paprika. the only thing I do differently is add a 1/4 teaspoon of xanthan gum to stabilize the emulsion. I want to try the technique with tomatillos and jalapen next..
Amen, amen, amen, amen! Why use the control freak and then not give the temperature?
We use the control freak every time regardless of the need when we do our shoots. Simply because it is easy to place on any surface and we don't need to set a camera rig up around the range. But it is no different than using your home stove for most applications. We would just instruct cooking ranges such as medium heat, high, and so on. That is just cooking. You will get a feel for it. But any time there is a precise need for the temperature we will let you know. I use a different temp setting by a range of 50°f when cooking this salsa so it doesn't really help to give one set number. But we hear you! And will make sure it's added when it is truly needed.

Thanks Jose! I'm glad you like it. I actually just made a batch last night too. I really appreciate the response as this has been my go to salsa since my former cook taught it to me.
