Mochiko rice flour is a great sub or any other sweet rice flour.
Don't substitute cassava flour if you are looking to go gluten free. It turned into spicy slime. I'd love a gluten free option though if anyone has thoughts!

Very nice cheese sauce indeed. Spicy and the depth of flavor is great.
60 g of water will work. If you want more flavor then you can supplement the 60 g with a touch of lemon juice or even white grape juice.

can the wine be substituted with anything else - non alcoholic - i understand the alcohol burns off - but still cant use it
