I will be trying this recipe in a few days. Once the hot dogs have been made can they be frozen for later cooking?
Yes. Seitan dogs can be prepared through step 5, and refrigerated in an airtight container for up to 1 week, or frozen for up to 1 month. When ready to serve, pick up from step 6 and proceed with recipe as written.
It may be minor, but one thing I love in a proper frankfurter is the crisp bite of the casing giving way to the soft center. Any way to replicate that?
This recipe as is will come close to that. Of course it will never replicate a hot dog perfectly in texture. Taste yes. For more "snap" omitting the tofu in the recipe will reduce the tenderness.
Any chance I can do the blending in a food processor? No desire to try and pick gluten out of the bottom of a Vitamix. Also, if I just wanted to shortcut this and save time & $ with Vital Wheat Gluten + water, what would be the ratio of VWG to water? Every VWG + water recipe on the internet it seems adds flavors and other flours and does not give a straight flour:liquid ratio.
One more question: what's the diameter of the bamboo steamer? I think for a 1/8th sheet, it would need to be at least 11"?
Hi Greg, sorry for the slow response here. Matt is out of town on vacation and will be back tomorrow. I have seen him do this in both the blender and food processor so I think either can work for you. For the VWG I don't have a good ratio to recommend but do know Matt was strongly against using it as he felt the flavor was very bad compared to washing your own. And yes, the bamboo steamers we have are 11".
Hello Greg, you can use a food processor and just allow to rest to become emulsified. The blender is a shortcut. VWG will always have an off flavor and I have never found a recipe that tastes good, it is night and day. The time and/or money you would save does not outweigh the texture and flavor from making it from scratch.
Thanks to you both. There are some gluten-flavor-reducer ideas I've seen elsewhere I want to try. Regardless, I'd love to see more creative seitan and vegan ideas; bring it on!
