Curious why it specifies jumbo shrimp if it's going to be turned into a paste.
Any raw shrimp that you like to eat will work out.
I know I could test, but hoping to save some time and ask. Would sodium tripolyphosphate be of any benefit other than making a springy’er possibly more moist patty?

The better-half wanted these in freezing temps with snow on the ground. I obliged, and fired up the charcoal grill. I let them form for 9 hours. I can't say that I have other shrimp burgers to compare, but these were fantastic and massive! 210 grams were very filling.
Have heard that scallops treated with TSP don’t ‘sear’ as well so I wonder if the same might apply to shrimp. It can be a thing to find shrimp that does not have TSP…
I watched the video and it got me thinking about the crust that Grant mentions a few times. What would happen if you used Wondra flour on them right before searing like in the Stress-Free Scallops recipe?
