I catch a lot of trout fishing, can the salmon be substituted with them? I guess they are not as fatty but could be worth a try

This recipe slays! I skipped the grill and just made mine in a nonstick pan to 125F served with sriracha mayo and pickled lemon slices - was sublime. Better yet, my toughest critics (kids) loved them. Sold!
Has anyone tried cooking these on a flat-top/Blackstone grill? I'm wondering if the technique would work with one half of the grill hot and the other side cold/low....
