BraveTart (Stella Parks) often pairs the tiniest amount of rose water to enhance strawberry flavor. You would never know it was in the recipes I have followed. I am curious if a drop or two max would do anything to this recipe. I could try, but I am on the fence about buying the Popsicle molds, as this series was mostly an advertisement for them.
Sounds super tasty to me. You can use what ever molds you like, we just gave you the ones we preferred. You will need to get something if you want to make pops, choice on which ones is all up to you.
This specific recipe was absurdly good. I also tried a batch swapping out malic for citric - and personally I liked that one more, but the jury was split within the house.
I also poured a little short on the last pop - so filled up the remaining 1/3 of the mold with heavy cream. Definitely recommended.
After a few additional test batches, I've also settled on adding 0.5% CMC (which makes the texture wonderfully smooth and even smaller ice-crystals), as well as subbing the sucrose for an erythritol+monkfruit alternative (to reduce the added calories). Even if you don't swap sugars, if you have CMC on hand I absolutely recommend adding it while blending.
