Yeah. Advanced is not near difficult enough to describe this task. I cook recipes from the French Laundry and Aleneas without difficulty. Puff pastry somehow eludes me.
i believe chilling the sheet of butter helps handling.also a lot of home cooks here do not have space for a 2 kg dough, if the quantity can be cut down by a third that will help, but to my knowledge, one do not simply change the quantity of a dough recipe
