Looks like a nice recipe but I will stuggle to get a lot of the ingrediants
I just binged through Iron Chef Mexico, and then I see a recipe featuring Claudette. Wild. This looks excellent. I shudder to think what the bottom elements of her likely-free Joule Oven look like judging from the bubbling over that crazy. I didn't see a sheet pan underneath.
Anybody else try this one? Mine came out very over done. The 400F temp feels high for 4 hours of cooking. I have had great results with a leg of lamb at 300F for 7 hours and will probably try something like that if I do it again.
